I came home for the Christmas holidays, as most students do and I decided that instead of making my mom do all of the holiday baking by herself, I'd choose recipes that I could contribute to our festivities and family gatherings. My mom usually makes chocolate macaroons, peanut-butter balls, Christmas cookies and my sister makes nanaimo bars. I had to come up with something new that would compliment the haul that my family had already contributed. I realized that a common holiday recipe, fudge, was missing. I didn't want to just make your average, too sweet, super generic fudge, so I decided to come up with something new. Hence, peanut-butter chocolate fudge!
Ingredients:
- Chocolate Chips
- Peanut Butter Chips
- Unsalted Butter
- 1 Can Sweetened Condensed Milk
- Unsalted Butter
Step 1:
In two medium sauce-pans, separately combine the 1/2 of the condensed milk with the bag of chocolate chips in one and combine the other 1/2 of the condensed milk with the bag of peanut-butter chips over low heat. Monitor and stir the chips and milk until they've melted and become smooth and creamy.
Step 2:
Line a baking pan with foil and sufficiently grease the bottom and sides to make sure the fudge doesn't stick to the pan. Place spoonfuls of the melted chocolate in the pan, leaving a few inches in between each spoonful. In the gaps between the chocolate, place spoonfuls of the melted peanut-butter in between until all of the chocolate and peanut-butter has been used up. Next, place a piece of greased wax paper over top of the spoonfuls and using your hands, gently apply pressure, smoothing out the sticky mixture until it has overlapped and the surface of the wax paper has become flat and smooth. When finished, gently peel back the wax paper and brush on melted, unsweetened butter for gloss.
Step 3:
Finally, leave the fudge in a refrigerator for approximately an hour before slicing into small squares and serving.
The best thing about this fudge is that it isn't unbearably sweet; most of the time, I can barely handle one bite of fudge, but this recipe was very simple to make and was an absolute hit at all of our Christmas gatherings.
